Over the past 12 months I have about a stone in weight. Personally, I’m not sure how. If I’m being honest I haven’t been trying particularly hard to do so but with one thing and another going on in our personal lives we’ve had quite a bit of stress. This has impacted upon my health over the course of the past year and it’s this I believe has been the reason for my weight loss. Fast forward to now and my winter coat is huge on me. I’ve had it the last 2 years and I lost about 1/2 stone…

Christmas isn’t Christmas without mince pies. Flaky buttery sweet pastry encasing rich mincemeat full to the brim with rich decadent fuits and that lovely sticky sauce. If you’re lucky it will also have a little alcohol, brandy for example, mixed in as well. My Grandmother was a tremendous sweet pastry cook. He pastry was to die for. A quite simple yet gorgeous tasting rough puff pastry recipe. A recipe I use from her hand written recipe book dating back to the 1930’s. In our house from about now there at least 1 batch (24) mince pies cooked every week. Just…

Here by the sea things have been so up in the air the last few weeks. To be honest it’s been a bit of a roller coaster hell. One ride that I need to get off quick as its having an effect on my health. I’m not sure where this year has gone but there’s only 7 weeks left. Seven short weeks left of 2015. To make things a little better for myself, I’m making a few changes. Little simple things to get my health back on track.    These next 7 weeks, for 7 days each week, I’m making 7…

The countdown for what you ask?  CHRISTMAS.    Just 6 short weeks away. It’s hard to believe that another year has flown by so quickly. These next 6 weeks will fly by even quicker if we’re not careful. Over the next 4 to 5 weeks I’m going to be having a Us3Xmas festival; a series of posts mixed up with an online diary to get myself organised. Over social media I’ll be using the hashtag #Us3Xmas and would love to see any posts of yours on Chritmas foods, family activities, gift guides, recipes, crafts and tips. I’ll happily retweet if you…

As part of my 50 by 50 challenges I’d like to make an sold pie like my grand. She taught me to cook And I will be forever grateful to that. My favourite thing to cook was apple pie. Hers was always so light and fluffy. It’s taken me years to perfect pastry like hers. This is my Grans pastry recipe that I use too. I always use her Pyrex glass plates that I believe she had for a wedding present in the late 1930s. I love them, just the right depth for a yummy pie. A layer of pastry…
