Christmas isn’t Christmas without mince pies. Flaky buttery sweet pastry encasing rich mincemeat full to the brim with rich decadent fuits and that lovely sticky sauce. If you’re lucky it will also have a little alcohol, brandy for example, mixed in as well. My Grandmother was a tremendous sweet pastry cook. He pastry was to die for. I love homemade stuffing with my Christmas lunch. I love it on turkey sandwiches on Christmas evening. It just tastes so much better to shop brought packet stuffing that you add water to rehydrate. For my stuffing I use: 2 packets of sausage meat Pack of pre cooked and peeled chestnuts Pistachios Dried cranberries Fresh breadcrumbs 2 onions Streaky bacon Finely chop the onions and cook with a little butter Place the sausage eat in a large bowl Chop the nuts and add to he sausage meat along with cranberries and bread crumbs Mix well. A few years ago I suddenly had 2 non believers.  Even now it makes me sad.  This is what I had to say at the time: Christmas this is going to be very different from those over the past 10 years.
